Avocado Açaí Chia Parfait

Ingredients:

Açaí Puree

Avocado Smoothie:

1 ripe avocado

1 tbsp raw honey

1 cup unsweetened soy milk

 

 

Chia Seed Pudding:

2 cups unsweetened soy milk

2/3 cup  chia seeds

1/2 tsp pure vanilla extract (optional)

1/4 cup raw honey (optional)

Directions:

Avocado Acai Chia Parfait

Chia seed pudding (prepare in advance) :

Blend all ingredients except chia seeds and pour into serving glass. Whisk in chia seeds and leave in refrigerator for 4 hours or overnight to gel.

Avocado smoothie:

Blend all ingredients in blender.

Assemble:

Layer up chia seed pudding, Açaí puree and avocado smoothie.
